Poaching them will leech some of the flavor. When i make chicken for shredding i just bake or air fry them. Did so a few days ago for chicken cottage pie and froze what i didnt use.
Lots of yesses, I would add that with shredded chicken more so than whole chicken, keeping a tight seal is pretty important to prevent freezer burn. If you have access, try to store packed very tightly or using a vacuum seal bag (just speakin from experience)

2. Add chicken broth
3. Cook for an appropriate time
4. Remove chicken, debone (if necessary), and shred.
5. Freeze in meal portions.

Sure you can. If you're using boneless, skinless, I would freeze the whole pieces after cooking. That way you can shred, chunk, or slice as needed, after thawing.

Yup. Cooking kills bacteria, so no safety issue.
Texture might be *slightly* off, but if you're going to shred it I don't think that it'll be a problem.

How about poaching them in chicken broth? Might add a lot of salt to them though. But it should infuse a lot of flavor, no?
I poach in chicken broth all the time. Works well. You can add in other things if you like.

Just buy a bunch of rotisserie chickens from the store and save a step
