A Middle Earth: Shadow of Mordor/Shadow of War movie.
Those games are pretty good and fun with some nice storytelling and options to expand it, or even take the basic premise and go into another direction entirely.
SPOILERS: >!We see Talion picking up Isildurs ring and fighting the Ring Wraiths, and we see him finally succumbing to it at the end of the Blade of Galadriel DLC. But I believe there were like 50-60 years between those two points. Talion resisted the corruption of the ring for 50-60 years, far longer than any other human, keeping Mordor in a state of civil war so that Sauron's enemies had a chance to organise and build their armies (which culminated in the events of LOTR) and yet we haven't seen any of it! I see potential.!<
It also has the advantage of being part of a massively popular IP consisting of multiple cinematic successes, meaning it has the potential to also attract the more mainstream crowd (and not just those who played the games).
I do not believe any story driven game is good enough to become a movie. In my opinion Metro 2033 would be a better candidate than call of juarez for example. I need to see what soulsborne is for a kind of game.

This is probably the best answer. I would watch that movie.
Any of the more cut scene heavy final fantasy games. Assuming it can all fit.
Soulsborne or really any story driven single player game
